Oswaldo Bibiano's eyes and palate opened up when he saw Acapulco
as a viable avenue to move beyond his small town roots in the
little Mexican town of Guerrero.
We talk about that journey from there to his first interview with
David Machado at Pazzo in Portland, and learning new skills
fast. We discuss Autentica and touch on his plans for
something new in 2017 where he thinks will be the most exciting
area for restaurant growth in the future.
